Italian Prune Plums

The Italian Prune Plum  can  be used fresh in desserts, savory dishes, sweet dishes, compotes, juice and in cakes.  Good quality ones are firm to the touch and have a smooth skin.  They are deep purple and have a red blush which darkens to almost black when they become ripe. Avoid Prune Plums that are punctured, look wrinkled, have rough, brown discolorations or are quite hard.
The can be ripened when left at room temperature, or stored for a period of not more than a week in the fridge to ripen.  If they are needed sooner, they can be placed in a paper bag together with a banana (unripe) for a up to four days.
